I've used bookng sites like booking.com, expedia, etc for Luxor hotels using both the pay in advance and the pay hotel direct method. When paying the hotels direct I have never used my card.
When paying cash, both before I ever used internet booking sites, and when using them I have always paid in LE.
The law regarding foreigners paying in hard currency is still in force but not applied consistently. If you say you don’t have plastic or anything but EGP I’d guess they’d accept what’s on offer. This is Egypt
The President, where I usually stay when in Cairo, has a big notice in reception pointing out their obligation under the law.
I doubt the Thebes is too bothered but I have come across the issue in Iberotel....where the receptionist had to get clearance from the duty manager for a “regular “ guest..

EGP was quite acceptable at our apartment in Alexandria and hotel in Cairo.

It did say on the booking site that payments had to be in sterling which was not a problem,but as i said its all paid for now so job done

just got to find my way to there when i get to the West bank,is it walkable from the ferry ? or best to get a taxi?

Very few places in Luxor take plastic. Last time I was asked to pay in hard currency was at Iberotel a couple of years ago. They would have accepted plastic but their machine was bust. I spoke with the manager and paid in Egyptian pounds.
Hurgada may be different, ...

I’m always wary of using my plastic in Egypt.
But they’re quite happy with real money....dollars, sterling or euros. Sometimes EGP.....if it doesn’t bear a picture of Sisi with a cucumber stuck up his ar*e
