Pine Nuts or Kernels

Anybody any ideas where I can lay my hands on a kilo or so ? 'as my basil is growing...:cool:

I know it may be heresy to you but I just use unsalted peanuts. We have been eating pesto the last few days made from peanuts, rumi cheese, cilantro, parsley, shabat and corn oil instead of the standard ingredients.

When I started I used to say 'taste that, they all went rehan! I went no basilico! they went yeh 'rehan,ect ect...:cool:

Pine nuts are very expensive, so sold in small bags here in Luxor, as far as I know only 40 and KZ have it in stock. It is/was possible to buy them in bulk in the Muski Street area of the Khan el Kahlili in Cairo.

When I ask for Juss hind (frenetically speaking) I get coconut. For Pine nuts I ask for S'neyba (frenetically speaking!) :br

Since the 1001 recipes here don't even include the combination that I usually make, I would have to say you have infinite possibilities for improvisation in front of you. It is the basic formulas that count, after that you can make anything.

Pine nuts are actually seeds, and as a vegan are an important part of my diet as they have lots of protein, vitamins minerals and trace elements. They are also excellent for cardiovascular health as they contain oleic acid which helps to eliminate triglycerides.
I add them to stir frys, they are good tossed in some pak choi, with ginger and garlic.

As with all seeds and nuts, many are becoming more expensive( or will do shortly) due to increasing scarcity of plants and trees where they are extracted. As with all else I only have the certified organic ones, but well worth the extra cost nutritionally. :)

Another useful tip is .....always soak your nuts and seeds in water overnight, as it increases their bioavailability, meaning you get more nutritionally from them if you do this. Happy eating :P :eat

A bit long winded this but a good example of how and why to soak nuts and seeds :)

Always keep nuts and seeds in an airtight container in your refrigerator to prolong their freshness (from a friend who owns a nuts/ seeds company).
