Shrove Tuesday....

Now probably my best and quickest dish is pancakes any sort, I'm a genius at them. 'trust me I'm a Dr..
I often have them as a moorish sweet thing during a film..

The infamous Crêpe Suzette which became de rigour in the 60's, roughly when I became apprenticed to one of London's finest Chef patisserie's,
Raymond Andreattza.
I used to knock them up with two pans going, flip them out on marble 'watch the rest of the kitchen eat their fill,
then slip them betwixt greaseproof and chill them until required by the maitre'd who did his 'flambé flash thingy in the restaurant.
Oh! They will happily keep for a week in the fridge like this.

I won't demean myself with supplying a recipe, just have one decent unwashed teflon frying pan handy & and a bottle of cheap brandy.. :cool:
So tomorrow, it's Pancake Day, something to do with religion and Mardi Gras 'fat tuesday'

Totally agree there, but I burn the bugger out of them, but the teflon is cheap and replaceable every few months.
Then I give them to her next door,
When I was in catering college as a detention, one was made to scrub all the coppers with lemon & salt,
until I discovered a product that cut the time by 2/3rds.. :cool:

I invented this happy pastime, 5 gallons of tepol and 1 ltr of cochineal, it became so they tell me,
a Ramsgate Catering College annual prank.
After a few hours cars could not drive down the underpass not covered in red bubbles.
One of 6 trainee wannabee chef's I lived in the mayors house up the top of this hill in Bellevue Road, pretty manic times really... :cool:

I do enjoy a good pancake but much prefer savoury to sweet ones. My mum would sometimes prepare pancakes, stuffed with a minced meat filling, for our after school tea although on Shrove Tuesday they were always served with either golden syrup or lemon juice and a sprinkle of sugar.

Around this time last year I took an elderly friend out for a light lunch to a local farm shop with a café that we had previously favoured. They were promoting pancakes so I asked if they did savoury ones. They said they did and offered me a range of fillings. I settled for a ham and cheese one. When it arrived it looked to be well filled but when I took a forkful I was very disappointed. There was ample real ham with the cheese but it was stone cold. That I could just about cope with but the biggest horror was that the pancake itself was sweet, very sweet. I took it back to the counter and pointed out that they had made a mistake and somehow used a sweet pancake instead of a plain one. A conversation much like the following ensued:
They 'But that is a pancake madam.'
Me 'Yes, I know it's a pancake but I ordered a savoury one.'
They 'Yes madam, a ham and cheese one which is what you have been served.'
Me 'I'm not commenting on the filling, although I would have expected it to be hot. I am saying that the pancake is sweet.'
They 'Well of course madam, it's a pancake and that's how they come.'
Me 'So you don't actually serve savoury pancakes?'
They 'Yes madam, as we said before you ordered, you can choose from ham, cheese, tomato, tuna...etc or a combination of fillings.'
At this point I knew it was not worth pursuing any further, gathered up my elderly friend and left.

When I lived down in World's End in the Kings Road there were French crêpes originating from Brittany everywhere,
my favourite being Asterix, they did every sort of crepe imaginable, they were very fashionable in the 60's for the Chelsea Set.. :cool:

Dutch pancake house just round the corner from the British Museum was one of my favourites 30 or 40 years ago. From Holborn station turn west for about 50 yards and it was on the right, opposite a very good real ale bar whose name escapes me.

15-18" pancakes - savoury for main, or sweet for desert - were excellent. One felt stuffed after one of each!

So I just checked on Google Earth. My Old Dutch, opposite the Princess Louise. A lot of road-works outside in June 2015! Crossrail?

We had Pancakes with Cinnamon flavoured apple and real Maple Syrup (Imported from Belgium) topped up with vanilla Ice Cream.

I think you mean imported from Canada into Belgium as the belgium red maple, or black maple trees I think are North American.
But don't quote me on that... :cool:

Yes you may be right Dr, but these bottles were purchased I Belgium for me. I also use it for Waffles from the Waffle maker. (No Pun's Please about Waffle) :lol:
