Try a snorkelling boat trip out to the islands....maybe see dolphins!
A desert safari - jeep or quad bike - is also interesting. Fake Bedouin included!
Hurghada has an impressive aquarium....and el Gouna’s worth a visit, if only to observe the contrast between upmarket international-standard tourism and what you’ll experience in Luxor.

My first thought was - ask him to quote in GBP (I hate changing my money to USD). Unfortunately, having not visited Egypt for a while I've not been watching the currency conversion rates between USD/GBP/LE so I'm not sure now which currency would be best for you. I know I paid GBP when I used them and it was better on my purse.
