Chocolate sauce 1
1 tablespoon cocoa
2 tablespoons granulated sugar
½ pint water
2-3 drops of vanilla essence
Put the cocoa and sugar in a deep saucepan, mix smoothly with the water and then bring them slowly to the boil, stirring from time to time. Simmer gently for 10 minutes, then add the vanilla essence. The sauce is now ready to serve.

Chocolate sauce 2
2 oz plain block chocolate
2 tablespoons sugar
1 teaspoon cocoa
1 teaspoon instant coffee
½ pint water
1 egg yolk (optional)
½ teaspoon vanilla essence
Break up the chocolate and put into a saucepan with the sugar, cocoa, coffee and water. Heat slowly, stirring frequently until dissolved. Then simmer with the lid off the pan until it is the consistency of thin cream.
Draw pan aside, and if using the yolk, blend with 1-2 tablespoons of the hot sauce before adding it to the pan, and then add the vanilla essence. If no yolk is used, continue to simmer the sauce until it is a little thicker before adding vanilla.
