Black Beans
Anyone got any interesting things to do with these!!?!? Saw them the other day, couldn't resist - and now don't have a clue what to do with them!!!
Short of making black bean salsa and 10 bean soup - I'm a bit stuck! Got to find something good since they were a bit costly!

Make black bean hummus.
Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
16 ounces canned black beans -- drained and rinsed
1/4 cup tahini
2 handfuls cilantro
2 cloves garlic
1/4 teaspoon cumin
1 lime
Combine beans, tahini, cilantro, garlic, cumin and juice of the lime in a
food processor. Process until smooth.

Serving Ideas : Serve with bread for dipping.
PS-If you are using Egyptian lemons you will want to use 4 or 5.

Suppose I could make Black Bean Besara with it too! Don't know why - but I didn't think of doing similar bean recipes to those I do with other beans.
Black Bean Hummous sounds interesting though - might be forced to wage war on them tomorrow - just have to figure how long to soak them for and we'll be away!

Saw floyd the other day in cowboy country he cooked uo a dish of pork and black beans looked awful but the cowboys seemed to enjoy it!!
Found the receipie - you could substitute lamb for the pork?(or tofu or no meat at all?)

Ingredients
175g/6oz dried black beans
½ tsp salt
2 bay leaves
½ tsp freshly ground pepper
½ tsp cumin seeds
½ tsp dried oregano
2 tbsp vegetable oil
700g/1½lb pork shoulder, cubed
2-3 jalapeno or other chilli peppers, chopped
1 onion, chopped
2 garlic cloves, finely chopped
3 tbsp crushed red chilli peppers
2 tbsp blue cornmeal or cornflour
2 tbsp honey
Method
1. Soak the beans overnight in plenty of cold water.
2. Drain, then boil for 2 minutes with the salt, bay leaves, black pepper, cumin and oregano. Strain, reserving the liquid, and set aside.
3. Heat the oil in a pan (preferably a cauldron hung over a wood fire, wood mark 3!) and add the pork, jalapenos, onion and garlic.
4. In a bowl mix the red chillies, cornmeal or cornflour and the cooking liquid from the beans to make a kind of cowboy roux and stir this into the pan. Add the beans and finally the honey. Simmer for about 2 hours.
4. Serve as the sun goes down around an open fire, with a bottle of Kentucky Fried Gentleman and someone playing guitar.

I don't have a plan......so nothing can go wrong!

We seem to have all sorts of hummous varieties in the stores these days but this is a nice basic one.

I call Cilantro the green leafy part and Coriander is the seeds (crushed or whole) . . . . I can get fresh Cilantro at the grocery and am growing it in my backyard so I have some now.Goddess wrote:Cilantro is what the Americans call Coriander.

Here in Finland coriander and cilantro are the same and coriander seeds are simply coriander seeds
