My ginger seems to sprout just when I leave it on the kitchen table for too long

I love ginger but rarely use it these days (too hot to cook) so this is what happened! I bought now a new one and remembered to grate it and put in to the freezer.

i tried ginger nut bicuits when i was pregnant and that made me feel worse!:oops:

I keep the whole stem in the freezer in a bag and grate it as I need it. It grates easily when it is frozen

I break mine up into knobbles and then freeze them - then if I need slices or strips it's easy to defrost a small section.

I always grate mine. It's too vivid a flavour if it's in strips for my delicate palate
