Help!!!!!!

HELP!!!!!! for ramadam i always make a effort to cook sweets biscuits so thats what i did and cakes but my husband has requested konafa so we bought konafa but how do you make it as i have forgotten any one know and have the recipe pls help!!!!

lol - where did you manage to get it from - or are you going to give him shredded wheat

Hi Ladybird,
this recipe is from Samia Abdennour's book Egyptian Cooking.

Saniyit kunafa bi-l-mukassarat - Kunafa with mixed nuts
1/2 kg kunafa
1 1/2 cups butter
2 cups sugar syrup
1 cup mixed nuts
2 tbs raisins
1 tbs cinnamon
1/2 ts nutmeg

You will need 2 identical shallow oven pans. Place kunafa in pot over very low flame, add cup of butter and with 2 wooden spoons keep lifting kunafa to avoid sticking. Allow plenty of air and butter to penetrate all parts.
Lightly fry the raisins until they puff, then add to the mixed nuts, together with the cinnamon and nutmeg.
Line the bottom of a greased tray with a thin layer (about 1 cm thick) of kunafa. Spread the nut mixturre evenly over kunafa, then cover with the rest. With the wet palm of your hand, press down. Melt the remaining butter and pour over the tray, setting aside half the amount. Place in the center of low oven and cook. allowing top to brown. Turn over onto other tray, sprinkle with rest of the butter and return to oven, thus browning both sides. Remove from oven and saturate with cold sugar syrup.

Sharbat - sugar syrup:
1 cup sugar
1/2 cup water
1ts lemon juice
Dissolve sugar in water and boil for 3-5 mins. Add lemon juice and cook until liquid thickens slightly.

I have never used cinnamon nor nutmeg in my kunafa since I do not think here in Luxor people make it that way so feel free to do either way :)

BTW I really like this cooking book and recommend it to everybody because it's recipes are really authentic egyptian ones.

very funny cc if you had come visit me you would know that anything is almost possible to get hold of here.got it in the mediterrain shop here in drogheda!!!! :lol::lol::lol::lol::lol:
