Dina Sarhan & Chef Osama

I've recently discovered Dina Sarhan - her website is jam packed with Egyptian & International recipes - great for Ramadan ideas!!!! :D :D :)

Also found Chef Osama's website in English - www.chefosama.com - not too sure about the 'date mouse cake' though :? :lol:

I used to watch chef Osama all the time for the past few years - thought he was one of the best food shows on tv. But haven't seen a single one of his programs this year - he makes me toooo hungry! :lol:

Great site just added Osama's recipes to my bookmark.
I'm going to have ago at the Stuffed Potatoe balls this week-i think the kids will like them HOWEVER what the blazes is 'LABANEH', as it is one of the main ingredients in the recipe :dun:

Well i wouldn't be able to substitute the Labaneh as i do not know what it is in the first place???? :oops:

Labaneh is a soft, yogurt cheese - will do a bit of searching to see if I can come up with more info. I'm pretty sure you could use cream cheese as a decent substitute. :)

Edited to add this bit of info found on the net:

Arabs make a Yoghurt Cheese called "Labna".

Cooking Tips
You can use Yoghurt Cheese as you would ricotta or cream cheese.

To make it , buy plain yoghurt with no gelatin added. Line a colander or a strainer with paper towel or a coffee filter (or even clean panty hose), and set that in a bowl. Empty the yoghurt into the colander, and set in refrigerator for 24 hours until its volume has reduced by half. What remains in your strainer is your Yoghurt Cheese.

Whether you use non-fat (skim) milk yoghurt or a higher fat yoghurt is up to you. It will be tarter if you use skim. Some people find the tang too sharp when they use skim yoghurt and add a drop of vanilla and a dash of sweetener such as sugar.

Substitutes
Cream Cheese; Sour Cream; Greek Yoghurt.

could you substitute Quark instead of Labaneh?

I tried making Kibbeh once from Chef Osama's web site, but they didnt turn out anything like his!

Quark is a german creamy light cheesy low fat substance, plain, usually spread on bread with a bit of jam - Ive seen it in some UK supermarkets

Yesterday i managed to find a shop that sells Sauerkraut as Tesco's stopped stocking it along time ago.So tonight i will make a roast chicken dinner and i will be able to make some Kerpusta(fried sauerkraut) to have with it :P

OMG what a disaster :x i made the potato stuffed balls and they looked pretty good until i dropped them in the deep fat fryer-what a mess they all collapsed in a shredded heap after frying for only 5 minutes :x So much for that one :x and my oil was red hot????

Did you put them in the fridge for a few hours first? Sometimes that helps to hold them together. :)

I put them in the fridge for about an hour before hand :x
I am blaming Countessa for this-putting daft ideas in my head! :)
I had better stick to my decorating this week.Changed the bedroom colour again this weekend and painted my fireplace wall in my dining room yesterday-right off to get a paint brush now....oh no i can't firstly i have to rescue, empty or perhaps throw away my deep fat fryer
