Broccolli

I'm sure I ask the same question every year ...... but I have a kilo of Broccolli sitting in the kitchen and am open to (polite) suggestions as to what to do with it!

I thought I had a recipe somewhere for Broccolli Satay - but can't seem to find it in a search and can't be bothered to trawl through all my millions of recipe books looking! But failing no one having a secret broccolli sayay recipe up there's sleeves, I'm open to all suggestions (Apart from Broccolli gratin)

You can freeze it. I love it just steamed with a little butter and salt. A lot of people like cheese sauce with it. You can chop it and add it to soups and stews. Put it in casseroles. You can cut it up and stir fry it with cubed meat and other veggies. Beef and broccolli is wonderful.

Somehow I just knew cheese was going to get mentioned!

We had half of it last night (with cheese! :P ) and now got another half a kilo to think of something stunning with.

Think it's going to have to go in the freezer while I ponder it for a while - not sure I got the enthusiasm to down another quarter kilo of broccolli before it turns yellow.

Not a bad idea BB - tried it last year with Danish Blue and wasn't half bad!

I've cogitated it for a while - and it's in the freezer. Think even the dog ate enough broccolli yesterday to not want to look at it again for a while! :roll:

Oh dear, an excess of broccilli causes wind doesn't it. Now we know who to blame for all this wind at the moment :lol:

Wind?? You don't know the half of it!! It's peeing down up here too! ;) Chuffin broccolli!

I found one recipe I am about to try, already have broccolli in the fridge.

300 gr broccolli
300 gr coconut milk (or coconut cream if you wish)
grated lime peel (1 lime) and juice
0,5 tsp salt
black pepper

Add grated lime peel and juice and spices to coconut milk. Put the mixture and broccolli into a pot. Cook broccolli in coconut milk mixture in the oven for 25 minutes in 200 C.

And, I love different soups, broccolli soup sounds great. But to get some good fats you can add some avocado to it as well. But remember to add fresh avocado after you have boiled broccolli as avocado turns bitter when you boil it. Put as much broccolli and avocado as you wish, then mash them, I use hand blender. Then some salt, that's it, simple version. Will try this today.

Like the sound of the coconut milk one G, and I got a few cans in the cupboard - will try that one when I get some more fresh broccolli!
