Hi,
I've trawled the internet looking for recipes for a light moist fruit cake not as rich and dark as Christmas cake but could be used at Christmas too but without feed back how do I know it's a good recipe?
I had a recipe but lost it that soaked or boiled the fruit in orange juice or tea which kept the cake moist.

I just wondered if anyone had a special recipe that they know to work well?

I make one with dates soaked in tea which is good but this one is great and no eggs! Store in foil once made to keep longer.
What you need
1 cup self-raising flour
1 cup plain flour
1 tsp mixed spice and cinnamon
450gms mixed dried fruits(I like sultanas cherries as well)
1 cup brown sugar
225gms butter
1 tbsp golden syrup
1 cup water (or 1/2 orange juice 1/2 water)
1 tsp bicarbonate of soda
2 tbsp yogurt
1 cup mashed potatoes (2 mediun size - well mashed)
1 tsp vanilla essence

Method:
Sift flours and mixed spice together and keep aside
In a saucepan combine fruits, sugar, butter, golden syrup and water. Heat slowly over low heat, stirring constantly until sugar dissolves. When mixture boils, simmer for 20 mins. Remove from heat and add bicarb.
Cool the mixture to room temperature, fold in yogurt, mashed potatos and flour alternately. Finally add vanilla essence. Beat the mixture until smooth.
Spoon mixture into a 20cm round cake tin
Cover the tin with foil and bake at 180C for 1 1/2 to 2 hrs. When
the cake is baked allow to cool in the tin to prevent breakage.

The fruits can be soaked in brandy(martell fo course!) and also some brandy can be added when the cake cold but if you prefer it light can be omitted.
