First time Egyptian cooking

I need help, I would like to attempt to make some simple Egyptian dishes for my husband so that he doesn't get too homesick. Any ideas on what and how to cook would be appreciated.

[face=Comic Sans MS]What about a Tagine? There are some very simple but tasty recipes posted here. I'm told that falafal is also easy or can be bought in certain supermarkets. Pigeon may be available from some butchers/poultry shops or if not they may be able to get it for you.[/face]

have eaten pigeon but am a little squeemish when it comes to preparing things like that. I cretainly couldn't pluck, gut and stuff it. A Tagine sounds good though.

I'm sure a warag-el-lahma (roughly translated, 'meat in paper') would be appreciated :)

All you need is some cubed beef and lots of onions & garlic roughly chopped. Mix the onions and garlic with the beef cubes and season with salt & pepper. Lightly grease a large sheet of tinfoil and place the meat in the centre (if you can get hold of ghee dot a couple of spoonfuls on top). Roll the foil, sealing the edges, to form a sealed parcel. Put it in the oven at Gas 4 for around 2 hours - serve with some plain rice - delicious!!

Also very easy & simple to make would be kebabs with tahina salad (you can get tahina paste in Tescos).

why don't you try koshery a it is easy and so is the salsa(sauce) I'm sure you will find the recipe here some where if not i will post it again.most Egyptians love koshery it it fried onions ,Egyptian rice and lentils with small pasta on top perhaps he would enjoy teaching you if he got the recipe from his mama.i would imagine he would feel quite honored you are trying.best of luck.

I have been trying to cook some Egyptian dishes for many years but no matter how hard I try I cannot seem to get them right - I haven't got the skill. Egyptian women have been cooking since they were young - learning from family members - they are professional.

Good luck trying - let me know how you get on.
