Easy Chocolate and Cinnamon Biscuits
Makes approx. 40 biscuits
175gms. (6ozs) margarine or butter - softened
175gms (6ozs) plain flour
25gms (1oz) drinking chocolate (or cocoa if you prefer the more bitter taste)
25gms (1oz) semolina
75gms (3ozs) soft brown sugar
1+ teaspoon ground cinnamon (or more, to taste)
Chocolate - dark, milk or white
Oven: Gas 4 - 350ºF - 180ºC
Lightly oil a baking tray.
Put the flour, drinking chocolate, semolina, sugar and cinnamon into a food processor and process for a few seconds, or just sift it together & add the soft brown sugar.
Add the softened margarine and process for a few seconds to blend together or use a fork to bring the mixture together.
Put teaspoonfuls of the mixture on to the prepared tray, spaced a little apart, and flatten each with a wet fork.
Bake in the pre-heated oven for 20-30mins., or until they become crisp.
Cool on a wire tray.
Once FULLY cooled, melt the chocolate in a microwave or Bain-Marie and drizzle it over the biscuits.
Store in an airtight tin.
For dark chocolate lovers: Cocoa added to the biscuit mix is complemented by a dark chocolate covering and my personal tip is to add a small amount (maybe half a teaspoon) of cinnamon to the dark chocolate as it's melting. Using cocoa needs an extra half teaspoon of cinnamon in the biscuit mix IMO.
